In Spain, Monte Nevado manufactures and markets Mangalica products: hams, shoulders and loins.
All the Mangalica pigs of Monte Nevado are raised in Hungary by Olmos és Toth Kft., under the constant control of the National Association of Mangalica Producers, each of them with its individual certificate of origin.
After the slaughter, the products travel 3,500 km from the slaughterhouses in Hungary to the towns of Carbonero el Mayor, in the center of the Iberian plateau, and El Rasillo, in La Rioja. There, loins and hams, of limited production and very high quality, are cured in the traditional Spanish style, in a long and painstaking process of sorting and natural air-drying.
Mangalica Monte Nevado hams and shoulders can be purchased in whole pieces, in de-skinned and clean boneless pieces ready for cutting (ham in 5 portions or boneless shoulder) or in sliced formats. There are also Mangalica products in tasting cases, which allow you to precisely compare their flavor with that of a Serrano Ham and an Iberian acorn-fed ham. Monte Nevado Mangalica loin can be found in two sizes: whole loin or half piece.
