Parts of the Mangalica pig

Almost all parts of the Mangalica pig are utilized.

The most important ones, those from which products are obtained, are the following:

Principal parts of Mangalica from which products are obtained (cured or fresh):

  • Head
  • Loin
  • Sirloin
  • Ham
  • Bacon
  • Ribs
  • Shoulder

In addition, the following parts are used for prepared foods (sausages, etc.) in traditional Hungarian cooking, for example, in the making of sausages, or separately in some dishes and stews:

  • Head
  • Heart
  • Liver
  • Blood
